The Manifesto

Il Candidato was born in Albenga with a simple idea: make pizza the right way, without raising the price or lowering the quality. It's always been in the same spot — next to the town hall, in the heart of the old town.

Our mandate didn't start with a speech, but with a dough: flour, water, yeast, salt and the time it takes. The menu changes with the seasons, not with the wind — and we remain the place people come back to when they want to eat well, without surprises.
